Default Video Converter (For MKV)

I have a lot of MKV HD files that I would like to play on my PS3. I am using a converter (Xilisoft), but it takes FOREVER.. Which converter would you suggest? Also which container can I convert to, to keep the 5.1 audio? TIA

Doesn't that require a router or connection to PC?

I have Wifi in my house, I don't like dealing with routers and what not.
