Speed Racer - Has the CGI look, but the colors really pop
Sunshine - some of the cinematography is the best I've ever seen in a film.
Planet Earth - WoW.
Avatar - pure eye candy
Tron: Legacy - not as much pop as some of the others on the list as scenes tend to be lighted a bit darker, but that provides some nice contrast.

I wouldn't necessarily count Speed Racer's visuals as eye candy. The colors certainly remind you of candy, but the actual special effects are really fake looking and cheesy.
