In Demon's Souls, after the second fog gate in 1-1, roll from the stairs over the waist high wall to the area where the glowing red knight, Ostrava, is standing. There you'll find the Thief's Ring. Equip it. Never take it off.

Regardless of what Stat you concentrate on, you're essentially a melee character. Once you chose Strength, Dexterity, Faith or Magic, you do not place any points into any other. Except if it's required to wield a specific weapon.

Endurance 40 will max out your Stamina.

Ehh? Its actually more plausible earlier in the game and as a whole, to be a pure caster in Demon's Souls than in Dark Souls.

Also, I kind of lament handing out locations to good items and how to get to them, to new players. The thief ring's location is extremely important in several ways, to the early game experience.

Weapon damage scales with your primary attack stat. Whether you're playing Demon's Souls or Dark souls. Provided you're properly upgrading your weapon. There's no such thing as a pure caster. This isn't Dungeons & Dragons, and it should not be played as if it were.

Its true that you cannot start the game as a pure caster. But you can turn into one fairly quickly in Demon's Souls. This is due to the fact that you have no cast limit on your spells, can recharge your mana on the field with consumable items, and can also get equipment that automatically regenerates your mana. I have fought many pure casters in Demon's Souls and watched many youtube videos of pure casters at various points in the game. One of my first pure caster invasions was at Tower of Latria. This guy was just running around casting huge spells as fast as the animations would allow, as a move for intimidation. It was clear to me his mana was regenerating fast enough to sustain constant powerful spell usage. It WAS pretty intimidating. I stood back and watched him for a bit. Collected myself, and then charged toward him!

In Dark Souls, they do away with mana and just let you cast spells outright----but with limits on how many times. The limits are low enough that you can't complete levels as a pure caster or confidently PVP.

The Fragrant Ring isn't enough to cast spells indefinitely in Demon's Souls. You'd still need to consume Old Spice.

However, the lack of a pure spell caster is not due to your ability to indefinitely consume Old Spice. It's due to the game mechanics. Increasing Magic or Faith directly increases melee damage in both Demon's Souls and Dark Souls. Just the same as Strength or Dexterity. By design, there is no such thing as a pure spell caster.

there are a few ways to regenerate MP and I believe that nearly all of them stack. Similar to health regen. Additionally, you can consume spice, which is not hard to come by.

The fact that you have refillable MP, rather than hard limits on amount of times a spell can be cast, means you can be a pure caster in Demon's Souls.

Also, it's base defense that always gets a boost.....
base physical attack is only boosted by dexterity or strength.

You know what, you're right. I totally forgot that Crescent weapons and the Phosphorescent Pole give mana regen.

Sorry, I'm probably not explaining the damage thing very well. If you increase Magic, it doesn't directly increase your attack power. However, if you upgrade a melee weapon with the Darkmoonstone, making it a Crescent weapon, your melee damage scales with your Magic stat. The higher your Magic stat, the more damage your weapon does. Let's say a Crescent Uchigatana +5, just for arguments sake. While you could just run around casting all day, you'd be severely handicapping yourself by doing so. Especially since you can't hit targets that are strafing or moving at a diagonal.
