I would consider a movie to be 'sci-fi' whenever science (fictional or not) plays a central role in the plot.

That's why I would never say that Star Wars are sci-fi movies. Not even the guy who made them does it.

This is really, really difficult, because there are so many great sci-fi films, sci-fi films that are more sci-fi than others, and many vastly different subgenres of sci-fi. But I'll try...

1. Stalker
2. 2001: A Space Odyssey
3. Alien
4. Jurassic Park
5. Planet of the Apes

Honorable mentions (in order of release):

- The Day the Earth Stood Still
- Godzilla (plus a handful of its sequels)
- Forbidden Planet
- Invasion of the Body Snatchers (plus its 1978 remake)
- Solaris
- Close Encounters of the Third Kind
- Mad Max Trilogy
- Blade Runner
- The Thing
- The Terminator and Terminator 2: Judgment Day
- Aliens and Alien 3
- RoboCop
- The Lost World: Jurassic Park
- The Matrix Trilogy
- Donnie Darko

Star Wars episodes 4 and 5 would be on my list if I considered Star Wars to be science fiction.

...which I don't.
