Ratatouille (any Pixar but few will pick that one) and Apocalypse Now (I had a buddy who went that was made in 1979, no way, it looks brand new Nuff Said)

Because any Pixar is already a given, I'm going to go with a traditionally animated one: Sleeping Beauty. I could stare at those backgrounds all day, and the characters pop off the screen to the point of almost being 3-D.

As for live-action, I'll again go with an unconventional choice: The Sound of Music. Outside of the opening helicopter shots (which show some flickering), the transfer is shockingly flawless.
