I think you're forgetting that they'll be able to ressurect characters at will after Thanos is defeated. Killing Iron Man in Part 1 is a great way to show "yeah, this guy is serious" and it'll be a great way to end part 2 with him alive.
They've already shown Tony's mental state, and hinted at him willing to do whatever it takes to save his friends. Killing off Tony would be an easy way to transition him into a Nick Fury role. Have him give up the armor, and start making more crossover appearances.
Unless of course you think Disney is going to be fine paying him 200 million dollars a movie by 2030.
