You need to make sure that the audio output setting in the ps3 for the optical output is set to bitstream, not pcm. Then in the movie select the dolby or dts track instead of pcm, if it is present. You will not get 5.1 audio through optical with pcm tracks, only dolby or dts bitstream.
If you can still take back the monster cable for refund, do so. Pick up a $10 hdmi cable online. It's a digital signal. Value cables work equally as well as overpriced Monster cables.
Don't worry about Tpb/Cb Pr/Cr - the best image seems to be setting the video output to rgb & there's a second setting in there somewhere to set "full rgb" which gives you darker blacks. So when the video is set to rgb, the pb/pr/... setting doesn't mean anything.
