In this scenario you can either set the PS3 to output 1080i which your tv will downscale and deinterlace to 768p OR you can set the PS3 to downscale the 1080p source to 720p which your tv will upscale to 768p.
On my tv the second method produces the best results, probably because of the lack of deinterlacing.
