Players will output the correct aspect ratio. The bars appear appear, or don't appear, based on the type of display connected assuming the settings are correct on it, usually "16:9 auto", or something similar, is what you would use.

The only time I have ever used the zoom feature is with ancient non-anamorhpic dvds that would produce the image inside of a "box." Judicious use of zooming can compensate for these dvd relics. Example below:

I have to do that with True Lies, The Abyss, & Breakdown when I watch them, since they have yet to be released other than antiquated non-anamorphic widescreen dvd.
