Nobody's disputing that he said that.
Was he promised that all his story elements would be used? Did Disney/Lucasfilm betrayed him or renege on an agreement that he would be the arbiter of what did or did not go in it? No. He admitted later that not being the dictator/overseer was the reality of the situation he knowingly and willingly volunteered for. And by volunteered for I mean paid $4b for.
The conversation you've joined was prompted by the claim that Lucas was to be the overseer and dictator of the trilogy and then got stiffed. It's a false, mythic narrative that Lucas himself has since busted.
