I'm sure a fan will re-create the "special longer version" using the theatrical cut to have all three versions available in HD.
Frankly, I'd be curious if it'd be possible to trim down the flying through V'ger sequence that goes on for 25 minutes or so? That's the one area the pace just stops dead. Otherwise the movie is fine as it is in theatrical form, but that segment is where it comes to a crashing halt.
