The guy at Best Buy has it backwards. A 5.1 system uses L/C/R, two surrounds on the sides, and a subwoofer. 7.1 adds the two rear speakers.

The L/C/R speakers are the most important, of course. You may want to use a bipole or dipole type speaker for the surrounds, something like the BPX. Rears should be direct radiating. It's a good idea to get speakers from the same family so that they timber match. But, that's less important with the surrounds and rears than with fronts.
