Well, at first there WAS an issue with PS1/2 quality with a PS3. This was mainly due to the infamous 'pixel flipping' with 480i and 480p games. There's some examples of this on you tube showing it with the PS2/3 side by side and FFX, but in short heres a picture:



This has sense been fixed in a firmware, and the PS3 even offers scaling and smoothing for these games.

I prefer not to play with stretching or smoothing though, but that's just me. FF8 looked pretty good for a 10 year old game 2 platforms ago when I played, and actually looked better than PS2 conversion. Also, I've heard that the 40g version doesn't have the required parts to play PS2 games. I don't know if this is true or not... You might want to check.
