That reciever should decode sound over HDMI. Check your setting on the PS3 for HDMI audio. (bitstream or linear). That should fix your issue.

This is the Error I get when I go to the PS3 setting. Same result nomater if it's set to Bitstream or Linear.
But my main question here is, has anyone ever heard of a Video only HDMI cable? Is this something made up by Tier 1 suport to get me off the phone?
