The brightness or a slight difference in saturation isn't the issue here.
if you'd like, look at the screenshots from the VHS posted by Freddy (in the spoiler), which are less bright and washed out than the Laserdisc. (that is only due to the transfer)
The issue is a radical change of colors and a whole new color palette!
From a white-pink sky originally to an orange-yellow in the BLurays (and DVD), making the bright morning look like a late afternoon.
If you first saw Beauty and the Beast on DVD, or if it's not one of your favourite films, of course you won't mind. (i wouldn't mind eg. if they changed the colors in "Adventures of Winnie the pooh".
But because it is my favourite film of al time, and i saw it first at the cinema, saw the TV documentaries before that, collected screenshots from magazines etc, and then saw it on VHS and know it by heart, I
do mind a lot with such radical changes!
