If everything is correct in settings, bitstreaming DD or DTS should still be in 5.1. PCM 5.1 on the other hand would only show up as 2-channel audio, because optical can't carry an uncompressed signal like that (lack of bandwidth).
Make sure on your setting on the PS3, that you're checking off DD 5.1 and DTS 5.1 in your optical settings...I think you'll find it under BDVD settings.
