Looking to buy my first receiver

Hoping for some help here, I've stayed in a smaller flat the last few years and always just had an amp & 2 speaker setup. Larger place now so looking to upgrade to 5.1

Looking for a receiver with 4k upscaling and good sound, not fussed about 3D, 7.1, wi-fi or any other fancy features.

Also, am I right in thinking a receiver will automatically downmix 5.1 sound to stereo or mono if you turn the back and/or side speakers off?
