Carlito's Way - director and star of Scarface together again.

Donnie Brasco - less action, more acting, but still a good gangster flick based on the true story of an undercover fed in the mob.

State of Grace - Irish mobsters in Boston (Ed Harris, Gary Oldman, Sean Penn) - one of them is undercover. Has one of the most extreme uses of slow-motion in a gunfight ever during the final shoot-out.

Once Upon A Time In America - the legendary Sergio Leone directs the hell out of a classic novel about the rise and fall of Jewish mobsters in New York. I prefer this to the Godfathers, just as I prefer Casino to Goodfellas and Carlito's Way to Scarface. Amazing cast, great period details, brutal.

Sorry, forgot to say - most of these are still DVD only, although in some great editions (Once Upon A Time In America). I think Donnie Brasco is the only one with a Bluray release. I second the other suggestions here of Casino and The Untouchables - LOVE the latter, my Blu-ray is third dip on home video for it.
