How high should the rear speakers be set for a 5.1 surround sound setup?

in a 5.1 they should be more "Side" rather than rear..... but a good rule of thumb is to have the tweeters at ear level. If that isn't possible, try to point them in a line of sight towards the seating position.

Most say 2 feet above ear level.

So facing the rear speakers on the side wall facing each other in line with the sofa is better than having them face the tv direction in the back rear wall?

Correct. That is where Rears in a 7.1 setup would go.
