I see "havok" on SO many PS3 titles! What the hell is it, and is it really cool or something?

It is a physics engine. It's usually used for ragdoll effects as well as giving objects, physics in all 3 dimensions. Also, I never really thought that they were an Irish company.

It isn't in everything. It's just an engine available as middleware, like PhysX.

To be a bit more specific, Havok is a physics engine that runs on the CPU. PhysX is a physics engine, from Nvidia, that runs on the GPU. You will rarely see PhysX being used on the PS3 because of that. The place where there is power to spare, for the PS3, is in the CPU and not the GPU.

I don't think anyone cares, but there are two versions of Havok:

Havok, which is the complete package with source code, that developers have to pay for. If they use this, they don't have to show the logo.

Havok Complete XS for PLAYSTATION®3, which is a free and usable package that does not allow modification to its source code. If they use this one, that's when they must show the logo.

So it can continue to be in everything. Developers looking for physics engines need to know that Havok is available, and playing a game with a great physics engine might incline someone to use that engine for their developments. So advertising or displaying that Havok is in that game will help grow credibility.
