There has been a thread started on budget Home Theater that you might want to look at. I know you already have a whole setup but the members have suggested a few receivers in your budget.

https://forum.blu-ray.com/showthread.php?t=127615

Sony STR-DH800

http://www.vanns.com/shop/servlet/it...ony-str-dh800#

I've heard the Harman Kardon HK AVR 254 can be had for around 250 on Ebay
http://stores.ebay.com/Harman-Audio_...34Q2ec0Q2em322

This Denon 5.1 AVR590
http://www.ecost.com/detail.aspx?edp...avID=155441524

Also Yamaha HTR 6240 5.1 ch Receiver
http://cgi.ebay.com/Yamaha-HTR-6240-...item2a0379fe51

All within or around your price range.

Yes you do not need to hook up the other two channels.

Yes, the autosetup will not detect any surround back speakers and configure your system as 5.1. You should also be able to manually configure no surround back speakers. And where the Denon AVR590 is concerned, this is a 5.1 unit with preamp out if you want to run 7.1 to an external amplifier.

I also second or 3rd the AVR590 recommendation from a few others above. I recently picked up this AVR for a second HT, and I can't rave enough about this unit. This unit is solid. It doesn't run hot, and it is equipped with the latest Audyssey features, including Dynamic EQ and Dynamic Volume. My vote goes for this unit, although it may be a bit out of your price range. I'm running Audyssey DEQ and DV in my main room and these features have changed how I feel about HT. I think the Onkyo 507 is also a good choice and will also have the Audyssey features as well as one more HDMI input.

I forgot about the Onkyo HT-RC160. This is basically an Onkyo 607, but just slightly less power (10 wpc less which is negligible) and no front HDMI port. Newegg has a good price on these + free shipping.
