Default Buying a PC, would like some help.

I do a lot of creative stuff on my PC and I would like to game as well.
I'm not sure if any of you have any experience in digital modeling, like sculpting digitally but that's what I'd REALLY like to do and I just really want a PC powerful enough to do it without problems... really need advice as this is the first PC I'm getting myself and none of my friends are any help.

Here are my specs so far and my budget is around $1,500

Intel i7 920(2.66GHz)
6GB of DDR3 ram
1TB HDD
I'd like 2 DVD-ROM drives, I'll replace one with a BD drive later on.
750W Corsair PSU(do you think that's good enough?)
Windows 7 Professional

Also I need some advice on which GPU to go for, I would like an Nvidia card as I heard they're better for 3D applications and Photoshop.

I'd really like the GTX 295 but that will be $1769 with everything... and Nvidia are releasing the newest cards this year with DX11(which is a big upgrade) so my question is, should I just go ahead and get a cheaper GPU, save some cash and upgrade the new Nvidia card later on?
