Do the triple feature bluray packs have single disks with the commentaries and extras and the transfers from the single disks with the same picture quality or are the all smooshed onto one disk?

That's a pretty broad question and it depends on the label, the movies, etc. Do you have any specific examples you are asking about?

Most of the major studio ones that I have from Warner, Paramount or Sony use the same discs and content that you would find on the individual releases.

Depends on the company, Warner keep them on individual discs with the same exact discs found on solo releases including features. On the other end of the scale Echo Bridge put them on one disc with no features.
The database here should say how many discs there are.

Six of one, half a dozen of the other. It depends on the triple feature.

I would say that probably most of them are just the three original discs compiled into a 3-disc case, because that's actually the least amount of work for the studios. Warner Bros' was spitting out a lot of these some years back, and they were the three regular discs with all the extras the originals had.

On the other hand, there have also been sets that cram all the movies onto one or two discs. For example, there's a set for three of the later Halloween movies, and they actually smashed all three movies onto one disc, with none of the extras.

So you kinda have to go case by case if you're curious. Fortunately this site should tell you which it is simply by virtue of how many discs are included.
