Default High-Definition Audio

Hey folks.. I did a search and didn't see it come up, so forgive me if the topic's already been covered..

But, what's the best sound quality in HD? I see Dolby True HD and DTS Master HD Audio formats, Uncompressed PCM, Compressed PCM, etc, but what's the true hierarchy? In playing my Blu-ray discs, which should I choose every time (if available)?

And now that we have that all figured out, what is needed to pass that signal? I have a PS3, Monster M-Series HDMI cables (beyond HDMI 1.3!), Panamax 5400 Power Conditioner, and a Panasonic TH-50PZ700U (1080p 50"). My Denon AVR1907 obviously won't be able to take care of it, but I'm considering getting the <A HREF="http://reviews.cnet.com/av-receivers/sony-str-da5300es/4505-6466_7-32552105.html?ar=o&tag=pdtl-list">Sony STR-DA5300ES</A> when that comes out, which will! Anything else? Any limitations in my system?
