Isn't Blu-ray suppose to be the superior format? Yet the DVDs of these titles are far superior to their Blu counterparts, in terms of special features.

Misery, which didn't have any special features on the Blu-ray, at least included a DVD disc with them on there. Why not Carrie and Amityville? They're even from the same studio!

What crappy, rushjob releases. I guess there's no hope for any new editions down the line...??

Of course there are. The studios release them bare bones now, just so they can release a special edition later.
