this is my absolute favorite meal to make at home and i figured i would share with blu-ray.com
![]() 2lbs uncooked shrimp(i buy with shell on) 1 bunch cilantro 1/2 jar of salsa(hot or not) 1/2 chopped onion large flour tortillas 4-5 limes 12oz package turkey bacon (or real if u prefer) 1 can chipotle peppers in adobo sauce spinach optional first thing to do is peel all the shrimp. throw in a bowl, mix a small amount of butter throughout the shrimp with a wooden spoon then throw some seafood seasoning onto the shrimp. stir gently again. after this step i prepare the charcoal grill and set the shrimp aside in the fridge. ![]() squeeze two or three limes into a small saucepan and add half jar of salsa along with adobo sauce and 3-4 peppers(chopped), mix well. ![]() throw the bacon in a pan(i use a wok) and cook on med-hi heat until browned then throw in the onion, all the while heating up the sauce on medium heat(stir often). ![]() it helps to have two people for this part....one can skewer the shrimp, the other can watch the bacon/sauce mixture. ![]() throw that shrimp on the grill! keep em tightly packed and close to one another as this helps keep them nice and juicy(2-3 minutes cooked each side). throw the sauce mixture into the bacon and onion while the shrimp is grilling and let simmer for a few minutes to help thicken it up slightly. ![]() throw everything together into the same pot along with some chopped cilantro. u can keep the heat on medium for this step to keep the mixture nice and warm ![]() i add spinach to the bottom of the mixture on the tortilla, it adds nutrition and doesnt really add or take away from the flavor, so why not? u can also add a tad more fresh cilantro to the top of the mixture and squeeze some more fresh lime on top of it. ![]() u can adjust the spiciness of this recipe very very easily with the chipotle peppers/adobo sauce mixture. just add more or less. i tend to use about 1/2 can of the sauce and about 3-4 peppers. it goes AWESOME with sour cream but it isnt required. ![]() ![]() |

I'll pass on the tortilla burrito, but plopping that shrimp on a salad or over rice would make me very happy. |
