My question is, what is going to be the proper way to rip my DVDs for playback on a 60" HDTV? I'd like to preserve the surround sound and, obviously, the picture quality. Don't care much about menus, extras, etc.

He's asking about the best procedures for ripping a DVD. This topic is forbidden discussion due to the fact, ripping DVDs is a copyright infringement it's illegal. The OP heading is asking one question, while his post is asking another.
