I don't know all the dates but:

Powerman 5000
Uncle Kracker
Kid Rock
Adema
Cypress Hill
Linkin Park
Chevelle
Taproot
Disturbed
Blue October
Bone Thugs N Harmony
Christina Agulera
Destiny's Child
Montell Williams
NuFlavor
'NSync
Backstreet Boys
Olivia Newton John
Kool and the Gang

Most of those I saw for free through certain events. Austin (Live music capital of the world!) tends to have a lot of events. I've seen very little compared to most everyone else here.

I am hoping to add Roger Waters onto that list if he goes on tour with "The Wall" this year as rumored. And Elton John will be here in April....I may go to that.

Kiss, Kiss, Kiss, Kiss and Kiss multiple dates and years. There isn't a better concert. I have seen other concerts. But Kiss is the ultimate show!

I have not paid to see many, sadly. Some notables:

Toad the Wet Sprocket
Dave Matthews Band
Hootie & the Blowfish
Jimmy Buffett
Radiohead
Mr. Bungle

But, I got to see lots more up close and personal during rehearsals and tapings at a show I worked at, including Foo Fighters, Pearl Jam, Oasis, Faith Hill, and many others.

Pearl Jam

Beta Man I would kill to see RATM!

I am still kicking myself for skipping out on Pearl Jam last year when they toured doing the Ten album again.

I have never heard of anyone who has seen Mr Bungle live! Your old job sounds like it was a good one too.

Man, hard to remember them. Here's a few:

Monster of Rock, I think 1987 in W. Germany (Iron Maiden, Kiss, David Lee Roth, others I have forgotten).
Pink Floyd also in 1987, Frankfurt. Flying beds and pigs, that whole thing (was awesome).
Joe Satriani
Duran Duran (don't laugh!)
Ozzy Osbourne
Motley Crue
Van Halen (Alice in Chains opened for them, and I barely paid attention - AIUC is now my favorite band! Damn me)
Metallica

I feel like I am forgetting several other shows here...damn memory.
