I think it's being over-analyzed. Team ICO's great and I'm sure the finished product will be great as well, but speculating on it doesn't get us anywhere.

Given the few notable references, I think it's a fair guess that instead of a horse, you get to fly around in their next game - and that would be very cool indeed as long as it doesn't end up like Lair.
