I have a Life of Pi Combo Pack that includes both a UV copy and a DVD with an iTunes copy. Both use the same code. Does redeeming the UV copy have any impact on the iTunes copy? In other words, if I redeem the UV code and sell the discs, will someone else be able to use the iTunes copy?

For the most part when someone redeems the UV first the traditional DC is still valid. The opposite will not always be true. The highest success rate is generally reported if people redeem the code on portal sites rather than studio sites.
