Default What's up with the lossless 2.0 Mono tracks? Is there any difference from 1.0 Mono?

I've seen this in a lot of Blu-rays.

Why split one-channel into two when your intention is to give us the original track? Can you put them back together coming out of the center speaker?

The short answer is that if your audio receiver has a ProLogic mode, it should do exactly that.

Because mono is not supported by DTS. 2.0 is the minimum. 3.0 is also not listed, which would be the next best thing.

2.0, 3.1, 5.1, 7.1, and 11.2 are supported, depending on how fancy your DTS is.

Even on 1.0 PCM tracks, my PS3 will send out 2.0 PCM to the receiver and my Panasonic standalone will send out 5.1?! I can't figure out how to get the Panasonic to send out just 2.0 so my receiver will do the rest.

Is it set for Bitstream? That should send the raw audio track to your receiver.

My Panny players do the same thing, they output 1.0 or 2.0 PCM as 5.1 PCM. Very odd, but it's very much a historical quirk as I've got a 2011 model and a 2016 and they do the same thing.

Another explanation is that most folks don't have a full-range center speaker. Any low frequency content would stand a better chance of being heard through the front left/right speakers, unless the receiver is performing automatic bass management to augment the center with the sub.

There are plenty of 1-channel DTS tracks, tons from Warner and Olive for example (Crashout and Shark are 2 that come to mind right now). 1-channel PCM is possible but receivers will always get that as a 2-channel signal that must be pro-logic-ed back to the center. Agreed that it's silly to have it play through the front left and right speakers instead, no theaters do that. The default should be to the center channel and there's adjustments you can make on your receiver if you want it the other way.
