Default 65" or 75" from 70"

Looking for some input. I'm looking to upgrade my current Vizio 70" 1080p tv. We currently sit anywhere from 13 to 16 feet from the TV in a mildly lit room (open concept kitchen/dining/living room, but the blinds are almost always closed in the living room side with the TV on the far side). My budget tops out at about 2500. I'm trying to decide on what to go with as I can get a 65" tv that has all that I want (4k, hdr10/DV, oled, excellent PQ - don't care about speakers as we have 5.1 surround) or I can go with a 75" and but I'll have to sacrifice something (namely oled and potentially DV). The main use is going to be over the air HD, apple TV 4k/streaming (no gaming here).
We have a pretty big built in for the TV. When we first moved in we had a 55" tv but looked pretty small for the built in, so that at the time I got the Vizio 70" to 'fill it up'. It's a nice TV, but I want to take advantage of new tech. So the big question is do I get a better display @ 65" or bigger display and sacrifice something from my checklist @ 75". The TV's that I've been considering:

LG Oled B7 - has everything but size
Sony x900E - no DV
Vizio M75 - has all check boxes, but lesser quality over all

One last bit too, is that I have a theater room with 120" screen and 1080P projector with 5.1.2 (or 7.1) surround which is my main movie viewing and gaming. I'd upgrade here but 4k projectors just aren't there yet. We do watch movies where this TV will be replaced, but I do have other 'options' for movie viewing as well for size.
Ultimately I'm leaning towards the 65" oled and I feel that not having DV would be a mistake (especially with the apple TV 4K). Has anyone else dropped in size (this small) and really noticed it? Other opinions are also welcome.
