A good deal for Unlimited customers, as well as new FiOS and 5G Home customers, but upgrading to Unlimited would be a lot more expensive than my current plan, so I will be paying for Disney+ separate.

Still hoping Disney+ will be available as an Apple TV Channel.

Big question is, does it stack with other deals? For instance, I did the D23 deal for the years, so it would be nice if I could get 4 years for it.

You will have to sign up through your Verizon account to create a Disney+ account so most likely no.
