"Munich" did not need to be rated R. Could have been a PG-13 or NC-17. It was pretty mild considering the subject it was dealing with.

Army of Darkness. Sam Raimi was aiming for a PG-13, but the MPAA was angry with him for releasing the first two Evil Dead films unrated. Bruce Campbell said they had to fight for an R-rating, as the MPAA tried to give it an NC-17!

Also, it may have been R-worthy in 1980, but John Carpenter's The Fog would easily get a PG-13 now.

Young Guns shouldn't be R today. Young Guns II was PG-13 for basically the same content and that came out only two years later.

The King's Speech is pretty much the poster-child for this. Without one line of expletives it's a PG-13 film. I don't remember it well but it probably could have gotten away with even a PG (barring that line of dialogue).

Ironically, there WAS a PG-13 edit that redubs all but one of the F bombs and it completely undercuts that whole scene. Basically, Colin Firth says **** once after being mocked for not saying THE "F" word and the rest are shits, and the speech therapist gets up and celebrates like he won the damn lottery (because he was SUPPOSED to let out a string of expletives) even though he just mocked him for saying shit repeatedly earlier because "it wasn't dirty enough".

There's the bit from CoolBadFlick's censorship video for context. It takes a scene that was pivotal to the growth of his character overcoming his speech impediment and completely ruins that scene, thereby undercutting the end of the movie since he learned to speak from a scene that never should've friggin' happened (there's the censorship again).
