im a noob ... is this set-up capable of producing 7.1 sound ??

Marantz SR5002 receiver 90w x 7ch HDMI home theater surround
2x Polk Monitor 50's (fronts)
CSi25 Black Center Channel Speaker OR Polk Audio Monitor Series CS1 Center Channel Speaker
Polk Audio PSW10 10-Inch Monitor Series Powered Subwoofer
2x Polk Audio RM6751 Satellite Speaker (rears)

You're gonna need an extra pair of speakers to make it 7.1

As long as you have a 7.1 channel Receiver, 7 speakers and a digital audio wire. You're all good.

What Blu-ray player do you plan to use?

If my information is correct, this receiver only supports PCM. You must set your player to output sound in PCM or use up to 8 analog RCA cables to connect your player to the receiver.
