...how I can change the PS store language. I've got it set to french because I live in Quebec, Canada, but now it just seems wrong and I don't remember when I set it.

I am not sure about the store but i know if you are using the webbrowser and triangle there should be an option on the right to select the language. Not sure if that will help.

You may want to try the account manager option in the XMB and see if there is an option in their for it.

The PS Store goes to the country the user account supposed to be at. So if you have a user account that is set to Japan, the Japanese PS Store will load and give you all Japanese text.

You could create another Canadian account but give it a different city or any city outside of Quebec.
