another help me thread - projector HT setup

hey guys, i will be moving into my new house around september and have a 15x13 bonus room that i want to be my media room. the room has 3 full walls and 1 half wall since its an upstairs loft as soon as you walk upstairs (hence the half wall).

things i want to use the room for:
-digital cable DVR
-ps3 (bluray player/dvd upscaler)
-xbox360
-wii
-htpc

now i already own these listed things so what i need help with is projector suggestions and audio suggestions. i've seen the ae3000u in person and was very impressed with it which is why i wanted to go with a projector. i have about a 5-6k budget for the projector, screen, speakers, receiver, cables, universal remotes, etc. since i only have 3 full walls a 7.1 setup wouldn't be right, correct me if i'm wrong. i would love to do 5.1 in wall speakers to save space.

please recommend me:
-1080p projector
-5.1 in wall speakers
-AVR that supports HD audio codecs and such
-stay within 5-6k budget
