What is your favorite BD to put on for surround usage? Maybe we should differentiate between 5.1 and 7.1? Obviously, latter preferred, but good use of 5.1 should be noted, too.

Here is what I demo for people for audio or just ones I've rented and I remember having very incredible surround tracks. Depending on who I'm showing it to, the material changes. (Ex. Not going to show SAW V to my grandparents):

I am becoming irritated with surround sound. It seems like every disc I own has a different volume level for the rear channels. It's not a subtle thing either. There are massive differences, especially between DVDs and bluray. It changes between DTS and Dolby too. Why isn't there a standard for these things?

Indeed. I actually own the set on both HD DVD and BD they are some of the best Dolby TrueHD tracks I have heard.

Let me one up it... can anyone describe some specific scenes (rough estimate of where in the movie, if not chapter and specific time stamps) on specific BD?

I know there are quite a few arrows from the surrounds on both sides in 300 when "we shall fight in the shade" after they defeat the first Persian attack and push them off the cliff.
