Set it to full screen to get DVD upscaled to 1080P. Normal displays in 480P.

480p? are you sure? Sounds very unlikely.

Double will double the resolution of the image (on a 1080i/p set you'll see black bars on all four sides of the screen)

Normal will upscale to the resolution of your TV, while preserving the original aspect ratio (4:3 content will be pillarboxed). This is what I have mine set to and what you probably want as well.

Full screen is like Normal except it will always fill all of your TV's screen with the image (4:3 content will be stretched horizontally).

I thought, and I could be wrong, that normal upscaled it to 720 keeping the aspect ration, double only works at 1080(it has no effect at 720) and full distorts the aspect ratio (at least on my set)

That's strange, on my set if I choose normal my TV displays it in 480p. If I choose full screen my TV displays it in the correct aspect ratio at 1080p. Perhaps it depends on the TV? I'll tinker with it some more when I get home.

I always get a mixed bag regardless of the setting. Some dvds look amazing upscaled and some just look like shit.

When changing the upscaler setting in PS3, how can you tell the output resolution for your specific TV? My TV outputs at 1080i but according to some of you different settings have different results. Do I have to hit select to view the resolution?

I could be wrong, but it will only upscale to 1080p via HDMI.

I think it'll do 1080i via component.
