Default TV's RCA audio output

My parents' TV has a stereo RCA out, and my question is, will the tv output audio through those RCA's even if the source going into the tv is from, say, HDMI from my PS3?

If your talking about a TV that has an HDMI input, and AV composite output, yes the output will work even with an HDMI input signal. But you will only get stereo and SD.

why would you output the audio from the tv via RCA?

(does it not have an optical out? most HDMI tvs do)

It does have optical out, but a simple 2.1 setup for computers is going to be sufficient for my parents- if the reviews I've read are accurate, they're probably going to s*** their pants when they hear these speakers.
