The Original Series - Classic. Love it.
Deep Space Nine - This is how you do a 'dark' series on Star Trek.
The Next Generation - A mix on 'Really Good', 'Fair' and 'Kinda Bad'. episodes. But still better then the majority of today's television.
Enterprise - Fails to be a good origin of Star Trek, until Manny Coto comes and makes it the best Star Trek since DS9. But too little to late.
Voyager - Hate it. It became a show where nothing matters. It should of been Battlestar Galactica before Battlestar Galactica.

The Animated Series - I haven't seen this since I was a kid watching it on Nickelodeon so I can't rate it.

Original (Sorry! I respect it as a breakthrough, and for what it started. But as far as sitting down and watching it? It's tough. But I love the original cast movies mostly!)
Enterprise.
Discovery (but Season 2 was a Big improvement imo)

To be fair it's been a loooong time since I've seen Voyager, DS9 or Enterprise. But that's my memory of them. Maybe if I watch them now I'd feel differently.

Voyager was always awful and even though it improved during the last two seasons, there's nothing Enterprise could have done to get rid of the stink that the first two seasons generated. And that god-awful Diane Warren theme song...

While I love the classic trek movies (besides 1 and 5) there are probably only a dozen TOS eps I actually like with the rest being just sort of there, so that's why I rank it so low.
