Never seen any outside of Empire of Dreams which is fine but not as strong as I once thought it was. I feel like those "Making of" books would be the best place to go rather than documentaries but Empire of Dreams is still okay for what it is.

Honestly, I like the fan ones like Building Empire and such. Too often I find a lot of the documentaries to be too nice - no set problems mentioned, no complains about Lucas, nothing. That is to be expected but it doesn't really tell you the truth about the film as a lot of great films ran into issues. At least with the Building Empire and such, you get to see how they constructed the film and that it wasn't a simple thing.

Others may be more comprehensive, but From Star Wars to Jedi is still my favorite. Too bad it's never been officially released outside of VHS and a Japanese Laserdisc. I still have a copy that my dad recorded of its premiere on PBS back in 1983. Watched it all the time growing up, just as much as the actual movies. It was the first time I got a really good behind-the-scenes look at filmmaking as a kid and it was so fascinating.

Read the book How Star Wars Conquered the Universe. It is a great look into the history of Star Wars, George Lucas, and Star Wars fandom.

The beginning is better than the entire prequel trilogy.

Empire of Dreams is great. The Beginning is almost more compelling, interesting and rewatchable for me than the actual PT, as was mentioned above.
But I have a special place in my heart for Classic Creatures: The Return of the Jedi. That doc, along with The Making of Thriller and the Incredible Hulk episode of Mr. Roger's Neighborhood, introduced me to the world of movie making and special effects.
