Default Music listening preferences: what setting do you like most?

Just a general question for you guys:

For those with a 5.1 theater ( or larger setup ), when it comes down to music not movies, which audio mode/preset do you use mostly? ( from either a standard CD, comp. file, vinyl..). I'm not referring to SACD

--->Stereo, multichannel,or a DSP ( ie."live club"," church "etc... ). And do you prefer the sub to be turned on or off during listening ( providing your mains can keep up in the mid and lower bass frequencies )

Personally, I like to stick to good ole stereo (2 channel ). Despite all the digital signal processing "sound fields ", stereo still sounds perfect for me. Even before I had full range speakers. What do you guys favor and why? Enjoy!
