I want to get the french steelbook. do french release blu's of american films have the option of setting english menues and and englsh film w/ no subtitles, if it is not set up like that as default?

The majority of french releases have forced french subs because of contractual obligations, but that usually depends of the company... and you can disable the forced subs on some players.

As this is from fox, you will not have the problem with forced subs. The matter of having english menus depends of how the blu-ray will be authored and if this editions is the same for many european markets or just for the french one.

Usually Fox discs are the same for all europe, with the option of english menus always available. All that is different is what extra languages are accessible via the menu, depending on the countries, and the extra subs.

I just checked on the steel book edition I bought yesterday.

English Menu, No forced subtitles on the 2D version of the movie, same thing for bonus disc and it's written ABC on each of the discs
I have no 3D player but I guess it's similar concerning subtitles
