Default couple of questions

is the cb/super white option in my PS3 supposed to be turned off?

another thing, if i decide to go pick up 2 extra speakers for the back(7.1 receiver), where am i supposed to put them exactly? directly behind me?

no. turn it on. and while your at it, turn cross-color reduction on and put the RGB full range to FULL. This will make games look a million times better. Its just a matter of if your TV supports them though.

yes. They go behind you. Its well worth it for the 2 speakers... especially if you already have a 7.1 receiver.
Ill forwarn you though... prepare to spend a couple hundred hours playing warhawk after you get those 2 speakers.

Here's a diagram.

I always keep the super white option on. In most of the calibration threads they recommend it.

What is the PS3 option for getting rid of the black bars?

my tv is a KD-46V3000, and will these settings make my BD movies look the same or better?

It will make them look better if your TV supports them. If your TV doesnt support them then the screen will go black for 30 seconds until it goes back to your default settings.
Chances are, if its an HDTV... its supported though. Im not even sure what they do to be honest, but they made assasins creed look ALOT better.

The surrounds aren't going to be as prevalent as your fronts or center, but you still want them to be in the same ballpark. Otherwise you may hear some inconsistency for sounds that pan from front to back, around, etc.

AFAIK, keep it in straight. Honestly though, I don't have a 7.1 setup, so I don't know how matrixing works for that. Somebody else'll have to jump in for that one.

what's the question? Why it won't allow it? What source are you trying to get the 7.1 from? it's only available on certain titles.
