Default Should I use 7 speakers?

Sorry but it's stupid question time for this old man.

I'm getting a new Yamaha 7.1 receiver for my PS3/Projector home theater. I'll have a powered subwoofer (a first) and I already have my very nice front speakers (left/right/center) as well as left/right surround speakers. I note that nearly all the blu-ray discs I have are only 5.1 so is there really any point to setting up two more speakers?

If there is, could I use bookshelf speakers (that's what is directly behind the viewing area, where the projector lives)? And finally, if so, what ones would someone recommend for a 95w per channel receiver?
