I like Maurice Jarre's themes in Lawrence of Arabia and Dr. Zhivago.

There are really two theme songs in Rembetiko, both by Stavros Xarhakos. These are great.

....man, there are so many others, I can't even think of them right now (I'm tired and about to turn in for the night)

edit: I have to add the theme song by Loukianos Kilaidonis in O Θίασος (O Thiasos, or The Travelling Players).

And Ederlezi, the Romani folk song in Dom za vesanje (Time of the Gypsies)

Nothing like that Balkan sound.

Monty Norman's James Bond Theme can't go wrong with 007
Hans Zimmer's Navy Seals Theme (The Rock) does that count
Danny Elfman's Batman Theme
John Williams' Star Wars Theme
John Williams' Imperial March
John Williams' Jaws

There's way too many great ones to pick a favourite (tune rather than song), but lately I've had Lalo Schifrin's Magnum Force theme in my head - and it's great!

I have the theme song to Di Gi Charat Nyo! in my head right now. I'm not so sure that's something to be proud of. It is catchy though.
