Default 18'x18'x8' room ... 7.1 or 5.1?

Which would be better in a room this size?

Right now I have 5.1 with the surrounds at about 45 degrees of the listening position and mounted high. If I go with 7.1, I'll move them to 60 degrees or so as the rears and put the surrounds at the side just above the height of my ears.

Any suggestions? Which is better in a room this size, 5.1 or 7.1?

Might as well go 7.1! An 18'x18' room is more than large enough for a 7.1 system. For most folks, room size has less to do with whether to go 5.1 or 7.1. It has more to do with having the capability of 7.1.
