for the games that show that, the sound probably isn't using an HD codec. Just standard dolby surround. Whereas when PCM 5.1 is shown (in your example, for movies) its using an HD codec such as Dolby True HD and is being decoded in your PS3 then sent out via Linear PCM.

Check the audio settings in your PS3, because that is where the key settings are made. If you have DVD set to bitstream, DD 5.1 will pass through to the Yamaha for decoding. If it's set to linear PCM, the PS3 will decode and pass to the Yamaha as PCM.
