Haha they're just tracks that stood out to me that I remember using surrounds very often.

The air plane crash sequence in Fight Club is awesome.
The Pacific also had really good sound as did District 9.

Airplane scene in Knowing is an incredible use of surrounds. That scene completely caught me off guard the 1st time I watched it. It's now one of my go to demo scenes. The sound is coming at you from everywhere in that particular scene.

7.1 only on the bonus feature "Legend of the Boneknapper Dragon". The main feature only 5.1, don't ask why I'm wondering myself.

By the way the main feature itself has great audio itself, excellent use of surround. John Powell's music just soars above you.

Maybe someone posted it already here, but Kung Fu Panda has one of the most detailed and enveloping soundfields of any BD I own. I highly recommend it for demo material, both audio and video.

I think "Se7en" and "Rambo" are two of the best 7.1 tracks I have come across. Some other surround impressive tracks would be "The Natural", "Transformers", "Fight Club", "Toy Story 2", and "Pearl Harbor"

The first movie I ever watched with 5.1 surround sound was Resident Evil. The surrounds in that are pretty much active very loudly 99% of the movie. It was wonderful. I'll never forget that experience. I think I'll watch it again this week...

This may not be the best for the surround channels, but The Social Network really lit up my LFE during a couple of scenes. It was quite impressive sound mixing.

If you just want to hear something relatively quick then put in Avatar and skip to the final chapter that plays the credits. Let them roll through until they're finished (or speed through them) and then there will be a THX demo/logo that plays that I've never seen anywhere else before. It makes incredible use of your surround sound system.
